But have you ever thought about Abura Soba? In fact, many of us may not even know about this food.

What Is Abura Soba?

Abura Soba (油そば) is a type of ramen without broth, which is part of Tokyo’s traditional culinary culture. This dish is also known as oily noodles.

There are two main theories about the origin of Abura Soba. The first theory suggests that the dish originated from a restaurant called “Sankou,” near Hitotsubashi University in Kunitachi, Tokyo.

This dish was inspired by noodles that were left out for a while and was first served as a side dish for sake in early 1955.

The other theory states that the restaurant “Chinchintei,” near Asia University in Musashino, Tokyo, was inspired by Chinese-style mixed noodles and began selling it in the same year.

Regardless of its origins, it is generally agreed that Abura Soba comes from the Tama North area in West Tokyo, and it later became popular throughout Japan.

In terms of appearance, Abura Soba may seem simple, but its flavor is rich, deep, and layered. The noodles are chewy, and the aroma is irresistible. You’ll find it hard to stop eating until the bowl is completely empty!

What’s So Appealing About Abura Soba?

Abura Soba is typically prepared by first pouring sesame oil into the bowl, followed by a soy-based sauce. Then, thick noodles are added to the bowl, and vinegar and chili oil are added as finishing touches.

Once everything is mixed together, the sour taste of vinegar and the savory soy sauce will immediately hit your taste buds.

The chewy texture of the noodles provides a satisfying chewing sensation, while the spiciness of the chili oil slowly spreads in your mouth without being overpowering. Finally, the delicate aroma of sesame oil lingers at the end.

How to Enjoy Abura Soba?

Once Abura Soba is served, Japafans can add vinegar and chili oil to taste. The way to add them is by pouring the vinegar and chili oil while rotating the bottle along the edge of the bowl.

If you’re unsure how much to add, restaurants usually recommend two turns for a regular portion, three turns for a large portion, and four turns for an extra-large portion. After mixing well, enjoy the noodles while they’re still warm!
